Easy Vegan Lentil Soup

You will need:

  • green lentils1 cup of green lentils
  • olive oil2 tablespoons of olive oil
  • onion1 large onion, chopped
  • garlic2 cloves of garlic, minced
  • carrots2 carrots, chopped
  • celery2 stalks of celery, chopped
  • cumin1 teaspoon of cumin
  • vegetable broth4 cups of vegetable broth
  • salt and pepperSalt and pepper to taste

Instructions

  1. Start by rinsing the lentils under cold water and set them aside.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion and minced garlic to the pot and sauté until the onion becomes translucent.
  4. Add the chopped carrots and celery to the pot and continue to sauté for another 5 minutes.
  5. Stir in the cumin, followed by the rinsed lentils.
  6. Pour in the vegetable broth and bring the mixture to a boil.
  7. Reduce the heat, cover the pot, and let it simmer for about 30 minutes, or until the lentils are tender.
  8. Season the soup with salt and pepper according to your taste.
  9. Serve hot and enjoy your vegan lentil soup.

Notes

This recipe serves 4 people. You can store leftovers in the fridge for up to 5 days or freeze for up to 3 months. Reheat before serving.
